“ARRÒS CALDÓS” (CATALAN PAELLA)
“Arròs Caldós” is a dish of humble origins: it was traditional among the fishermen in the Catalan coast as it was made with a stock prepared with small fishes, shellfish and crustaceans adding to it the rice, a great source of energy to endure a hard day of work. Nowadays it is much more famous the Valencian Paella, however I think the “Arròs Caldós” has nothing to envy, it is delicious, quicker to prepare and the stock used is the same in both dishes.
We will make a very simple version, giving special attention to the preparation of the fish stock, which is what gives its outstanding flavour. You’ll be delighted to discover something better than Valencian Paella!
