GAZPACHO WITH DRIED BONITO
Gazpacho is one of the simplest and at the same time most impressive dishes I have ever tried in my life! It gives you the idea of the importance of the products and its freshness and the incredible quality of Mediterranean vegetables.
Tomatoes, which are the main part of it, are a seasonal product and they are at its best from the end of spring till the end of summer, however in the last years the ones that came out of the greenhouses are of an excellent quality.
In addition, we will top the dish with a few slices of dried Bonito (“mojama”) to add a little bit of that sea flavour that is typical in the costal zones.
